Handling Instructions

  • Breakout & Thaw

    • Break product out onto flat baking pans lined with parchment paper.
    • Organize buns 6 x 8 inside cake frame
  • Morning Proof

    • Remove rack from retarder, remove plastic cover and put back into proofer or keep plastic cover on if floor proofing product until space is available in proofer.
    • Let product proof until 2-3 times its origional size. This should take about 60 minutes.
  • Bake

    • Bake Raisin Bun for 15-20 min at 325-350C (oven temperature and bake times will vary).
    • When bake cycle is complete remove from oven and let product completely cool before packaging.
